#39: Be Vegetarian for a Month

I’m not really a huge meat eater. If it’s there, I’ll eat it, but it’s not something I feel the need to cook for myself terribly often, and I don’t usually seek it out. Given this, I didn’t really expect this goal to be too difficult for me, and it wasn’t, particularly. I tried this out in the month between our Puerto Rico trip and Thanksgiving. For the most part, I didn’t have to change my habits all that much in my daily life. Sure, I substituted beans for beef on Taco Bell Thursdays, and I was a little tired of the few vegetarian options at Panda Express, but for the most part it wasn’t all that different from normal. Logan encouraged me to look up a few vegetarian recipes, so I wasn’t only eating Lean Cuisines (and Amy’s Country Vegetable Pie – so tasty!). I tried a few things, such as the parmesan risotto and Best Recipe’s egg salad.

In the end, however, it didn’t really inspire me to change my life or anything, but it’s nice to know that I can do it without a lot of trouble.
